Over a pound of chocolate cranberry bark? Well, now we’re getting closer.
Chocolate Cranberry Bark
8 ounces bittersweet chocolate
1/2 cup heavy cream
2/3 cup cranberries
10 ounces white chocolate
½ cup dried cranberries, finely chopped
Melt the chocolate over low heat, cool, then spread evenly on parchment paper. Cool until solid.
Mix cranberries and cream, bring to a simmer over low heat and hold the simmer for five minutes, then remove from heat and allow to sit ten minutes. Repeat twice, then strain cream, discarding solids. Melt white chocolate over low heat, then combine with cream mixture.
Allow to cool, then spread atop dark chocolate. Sprinkle with finely chopped dried cranberries, then cool until solid.
Break apart into rustic-looking chunks.

Ooo, that's way pretty! Typically when I'm making bark I do chocolate-on-chocolate with some peppermint sprinkled on top, but this looks like a really tasty variation. I'm definitely going to have to try this! :D

ReplyDeleteNow that is impressive. Love to see natural colours and i bet the contrasts in flavours here is just right with the bitter chocolate, the tartness of the cranberries, sweetness of the white chocolate and creamy texture. I'd be very happy to receive a lb of this.
